For breakfast I am always trying to come up with a new food to make. Sometimes it is hard to deviate from my usual eggs and toast or oatmeal. My favorite new breakfast food to make is breakfast tacos! This is because you can use whatever you have in the fridge and you can also change them up! For example, sometimes I add black beans, avocado, or veggie sausage to change up the flavor. Here is the step-by-step recipe from my latest breakfast taco creation. This recipe is for 2 breakfast tacos.
First, you will need to dice the onions and bell pepper and add them to the pan over medium heat. Drizzle with olive oil and top with a pinch of salt & pepper. Cook these for a couple minutes.
Next, add the store bought shredded hash browns to the pan with the onion and bell pepper. Cook over medium heat until the hash browns have turned slightly brown and crispy.
In a separate pan, add in 1 chopped tomato and a handful of spinach leaves over medium heat. Drizze with olive oil and cook until tender.
Scramble two eggs in a separate pan over medium heat. Sprinkle with salt & pepper.
Finally, heat up the flour tortilla in the microwave for about 10 seconds; this makes it more pliable. Add in the hash brown, onion and pepper mix, then the eggs and top with the cooked spinach and tomatoes. I like to add hot sauce as well. Pair with a sliced apple for a delicious breakfast!
