4 Recipes to Make With Spring Produce This Month

By: Klara Knezevic RD, LD

Spring is finally here! And with the warmer weather comes delicious seasonal spring produce that can be used to create healthy meals. Eating produce that is in season is not only cheaper, but more delicious! Spring also means that it is the beginning of farmer’s markets! So, what is in season in the spring? A lot!

  • Artichokes
  • Arugula
  • Asparagus
  • Beets
  • Bok Choy
  • Carrots
  • Fava Beans
  • Garlic
  • Leeks
  • Salad Greens
  • Onions
  • Peas
  • Potatoes
  • Radishes
  • Spinach

So what are some of our favorite dishes to cook with in season produce? Check out the recipes below!

Spinach and Artichoke Stuffed Chicken

This dish is a take on a favorite appetizer that is really easy to make. Feel free to make the filling ahead, and stuff the chicken. You can also make this the ultimate spring time meal by serving with a side of asparagus and roasted baby potatoes. Check out the recipe here.

1 Pan Asparagus and Chicken

If you are looking for a quick spring time meal, you need to try this one pan lemon chicken. Put all the ingredients on a sheet pan, season and stick in the oven. Dinner will be done in 30 minutes! Recipe here.

Leek, Arugula & Mushroom Frittata

If you need breakfast inspiration, try this delicious leek, arugula and mushroom frittata. It is very simple to put together (honestly, the hardest part is getting the chopping done). Check out the recipe here.
